Researchers identify overfermentation as culprit behind smoky, cheesy off-flavors in chocolate, pinpointing 2 key compounds to blame

Smoky off-flavors in cocoa are not solely caused by smoke contamination, but can also be caused by overfermentation of cocoa beans. Researchers at the Leibniz Institute for Food Systems Biology have found that overfermentation can lead to the formation of compounds with smoky, leathery and cheesy odors.
The study, published in the Journal of Agricultural and Food Chemistry, examined cocoa samples from various stages of fermentation and growing regions, including Nicaragua and Costa Rica. The researchers, including Franziska Krause and Martin Steinhaus, used modern odorant analysis techniques to compare optimally fermented and overfermented cocoa beans.
The analysis revealed that overfermented cocoa beans contain elevated concentrations of short-chain carboxylic acids, which can cause off-flavors that smell like cheese, sweat or vomit. Additionally, the compounds 2-methoxyphenol and 4-ethylphenol, which have smoky odors, were found in higher concentrations in overfermented cocoa beans. 2-methoxyphenol has a sweet, smoky smell, while 4-ethylphenol has leathery, phenolic and horse stable-like notes.
The study's findings have significant implications for the chocolate industry, as smoky off-flavors can compromise the quality of chocolate and other cocoa products. The discovery that overfermentation can cause these off-flavors highlights the importance of monitoring and controlling the fermentation process to produce high-quality cocoa.
